Instructions
Begin by grinding the pork shoulder and beef brisket together until finely minced.
In a mixing bowl, combine the ground meat with salt, black pepper, garlic powder, and sugar.
Add the ice water to the meat mixture and mix thoroughly to ensure even distribution of spices.
Stuff the mixture into sausage casings using a sausage stuffer, ensuring there are no air pockets.
Smoke the sausages at a low temperature until they reach an internal temperature of 68°C (155°F).
Once cooked, allow the sausages to cool before slicing and serving.
Notes
Store in the refrigerator for up to two weeks. Can also be frozen for longer storage.
