Ingredients
  

Meat

  • 1 kg Pork shoulder Cut into chunks for grinding
  • 250 g Beef brisket For added flavor

Spices

  • 15 g Salt
  • 2 g Black pepper
  • 5 g Garlic powder
  • 5 g Sugar
  • 50 ml Ice water Helps with mixing

Instructions
 

  • Begin by grinding the pork shoulder and beef brisket together until finely minced.
  • In a mixing bowl, combine the ground meat with salt, black pepper, garlic powder, and sugar.
  • Add the ice water to the meat mixture and mix thoroughly to ensure even distribution of spices.
  • Stuff the mixture into sausage casings using a sausage stuffer, ensuring there are no air pockets.
  • Smoke the sausages at a low temperature until they reach an internal temperature of 68°C (155°F).
  • Once cooked, allow the sausages to cool before slicing and serving.

Notes

Store in the refrigerator for up to two weeks. Can also be frozen for longer storage.
