Instructions
Preheat oven to 180°C (350°F).
In a mixing bowl, combine cookie crumbs and melted butter until fully blended.
Press the mixture into the bottom of a springform pan.
In another bowl, beat the cream cheese and sugar until smooth. Add eggs one at a time and mix well.
Mix in bourbon, melted dark chocolate, and chopped bacon.
Pour the filling over the crust in the springform pan.
Bake for 60 minutes or until the center is set.
Let it cool and then refrigerate for at least 4 hours before serving.
Notes
Serve chilled with a drizzle of chocolate sauce.
