Ingredients
  

Crust

  • 300 g chocolate cookie crumbs or graham cracker crumbs
  • 75 g unsalted butter melted

Filling

  • 450 g cream cheese softened
  • 150 g sugar
  • 3 large eggs
  • 120 ml bourbon
  • 100 g cooked bacon chopped
  • 200 g dark chocolate melted and cooled

Instructions
 

  • Preheat oven to 180°C (350°F).
  • In a mixing bowl, combine cookie crumbs and melted butter until fully blended.
  • Press the mixture into the bottom of a springform pan.
  • In another bowl, beat the cream cheese and sugar until smooth. Add eggs one at a time and mix well.
  • Mix in bourbon, melted dark chocolate, and chopped bacon.
  • Pour the filling over the crust in the springform pan.
  • Bake for 60 minutes or until the center is set.
  • Let it cool and then refrigerate for at least 4 hours before serving.

Notes

Serve chilled with a drizzle of chocolate sauce.
