Instructions
Preheat your oven to 175°C (350°F) and grease the springform pan.
In a mixing bowl, combine the graham cracker crumbs and melted butter until well mixed.
Press the mixture firmly into the bottom of the springform pan.
In another bowl, beat together the cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition.
Stir in the bourbon and chopped bacon. Pour over the crust in the springform pan.
Bake for about 60 minutes, or until set. Allow to cool, then refrigerate for at least 4 hours.
For the caramel sauce, combine brown sugar, heavy cream, butter, and salt in a saucepan. Cook over medium heat until thickened.
Once the cheesecake is set, drizzle the caramel sauce over the top and garnish with additional bacon before serving.
Notes
Serve chilled. Store leftovers in an airtight container in the refrigerator.
