For the Scones:
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/2 cup cold butter, cubed
- 1/2 cup heavy cream, plus more for brushing
- 1 large egg
- 1 tsp vanilla extract
- 1 tbsp dried culinary lavender
- 1 cup fresh blackberries
- 1/2 cup white chocolate chips

- 1/2 cup powdered sugar
- 1–2 tbsp heavy cream
- 1/2 tsp vanilla extract
Instructions
Step 1: Make the Dough
- Preheat the Oven: Start by preheating your oven to 400°F (200°C). Line a baking sheet with parchment paper so your scones don’t stick.
- Mix the Dry Ingredients: In a big bowl, whisk together 2 cups of flour, 1/4 cup sugar, 1 tablespoon baking powder, and 1/2 teaspoon salt. This makes sure all the dry ingredients are mixed evenly.
- Add the Butter: Use a pastry cutter or your fingers to mix in 1/2 cup cold butter until the mixture looks like crumbs. It’s important to keep the butter cold so the scones turn out flaky. It’s okay if there are still small pieces of butter left in the dough.
- Add the Wet Ingredients: In another bowl, whisk together 1/2 cup heavy cream, 1 egg, and 1 teaspoon vanilla extract. Pour this into the dry ingredients and mix until just combined. Don’t overmix — keeping it light will make the scones soft and tender.
- Add the Flavor: Gently fold in 1 tablespoon dried lavender, 1 cup fresh blackberries, and 1/2 cup white chocolate chips. Be careful not to smash the blackberries too much. The lavender should be spread evenly to give each bite a hint of floral flavor.
Step 2: Shape and Bake the Scones
- Shape the Dough: Turn the dough onto a lightly floured surface and pat it into a circle about 1 inch thick. Make sure it’s even so all the scones bake the same way.
- Cut and Place: Use a knife to cut the dough into 8 wedges. Place each wedge on the baking sheet, leaving space between them so they don’t touch while baking.
- Brush with Cream: Brush the tops of the scones with heavy cream to help them turn golden brown. You can also sprinkle a little sugar on top if you want extra sweetness.
- Bake: Put the scones in the oven and bake for 18-20 minutes, or until they are golden brown. Let them cool on a wire rack so they don’t get soggy on the bottom.
Step 3: Make the Glaze
- Mix the Glaze: In a small bowl, mix 1/2 cup powdered sugar, 1-2 tablespoons heavy cream, and 1/2 teaspoon vanilla extract. Stir until it’s smooth, adding more cream if needed. The glaze should be thick but easy to drizzle.
- Drizzle the Glaze: Once the scones are cool, drizzle the glaze over the top. This adds a little extra sweetness. You can use a spoon to drizzle it in a zig-zag pattern or just spread it evenly over the tops.
